I just came to post the following video, in which Dr. Hill talks a
little about the difference between an absolute process (for
extraction) vs. steam distillation:

Absolute is a term associated with the way these oils are extracted.
Absolutes are oils from the flowers as opposed to other parts of the
plant. Not all oils from flowers are obtained this way but oils from
very delicate flowers and are best obtained by layering the petals in
wax. The oils are attracted out of the petals into the wax from which
they are then separated so they can be put in little bottles for us
use - and love!

So essentially (she says with a smile) oils are steam distilled, cold
pressed or obtained by the absolute method.
