Agave has a low glycimic index and as with anything you need to use caution as the type you buy. It is
processed from the Agave Cactus and the sweetener cannot even be processed until the plant is at least
12 years old. And then you need to use the Agave that is dark and dense in color, which means it has
not been processed out. This is the good unfiltered agave that is a great sweetener. I have not seen any
scientific proof showing otherwise.
