I use the coconut oil to cook with all the time. You can buy virgin coconut oil at the health food store. The brand I get is nuTiva. It's better than Veg. or even virgin olive oil. It has a nice laid back sweetness to it. I actually ran out of veg. oil the other day, and didn't have time to melt my coconut oil (you have to let it sit out to get to room temp. because it is usually solid. I keep it in the frige.) as I was in the middle of a recipe for chocolate cake, and used 1/2 cup of our Fractionated Coconut oil. It worked just fine. The cake was very moist!
When using the oils, use only one or two drops of your oils for the flavoring. Depends how strong you want the flavor. When it cooks, and heats up, it looses some of the potency, so even a toothpick full can be enough, just try it. I put one drop of cinnamon in my chocolate cake as well, and there was a lot of flavor. Have fun experimenting. That's the only way to learn sometimes.

-- take to shows .....but don't know how to convert the recipe. Some recipes use the oils but some use lemon and peppermint extract so how would that be different?
